We love our pancakes! Both grandmas would make them with food coloring and in fun shapes and letters spelling out our names… good times!
I also love waffles and crepes. Living in Russia I made blini regularly and was even complimented on them several times. There’s no better way to serve caviar, imho. Buckwheat especially. And blueberries… and pecans…
So, now we are coming up on Maslenitsa… and today I have a free day. But got pulled into some Italian home-buying research and decided baking would warm up the house… So embarked on a Dutch baby. Have I made this before? Maybe. I’ve definitely eaten them. Plus I have frozen blueberries taking up space and pecans. And a lot of flour… (it’s a bit insane how much we have, actually).
Used the NYT recipe with a mix of APF, Buckwheat, and semola integrale. I had already added baking powder, thinking earlier i would make regular pancakes, so did 2 eggs plus some yogurt. Blender method worked well, and threw on the blueberries and pecans before popping in the oven.
