Forgotten cookies

Grandma made these all the time for us, and mom did as well, always at christmas.

Whenever I end up with egg whites (e.g., after making creme pat), I think about making these. But they never turn out as well as grandma’s …

  • 2/3 c Sugar
  • 2 Egg Whites
  • 1 c Mini Chocolate Chips (or 1/2 bag Nestle 10oz)
  • 1/4 t Cream of Tartar (optional) or 1/2 tsp lemon juice

Heat oven to 375°.

Beat egg whites with electric mixer until thick. Add sugar gradually until stiff peaks form. Fold in chocolate chips. Drop by small spoonfuls onto wax paper lined cookie sheet. Bake for 2 minutes only, then turn off the oven. Leave in oven overnight. DO NOT OPEN THE OVEN.

Variations:  add (at end of mixing) food coloring, almond, vanilla, or peppermint flavorings. May also substitute toffee chips or crushed peppermint candies instead of chocolate chips. 

Note the recipe says bake for *2* minutes. Not 10 :facepalm:

When adding extras, be careful not to add too much liquid…
