Apple Pie

Many believe this mom’s best pie. In fact, she calls it her Blue Ribbon All-Star Apple Pie, having won first place at the Kern County Fair, October 3, 1990.

This is her version:

Pastry for 2 crust pie
6 Granny Smith apples, pared, cored, thinly sliced
2 T lemon juice
¼  c. flour
½ t. salt
6 T sugar   
6 T brown sugar
½ t. cinnamon  
¼ t. fresh-grated nutmeg
1 T butter
Cinnamon-sugar mixture: 1 T sugar to 1 t cinnamon, keep in a shaker

Preheat oven to 425o.  Toss apple slices with lemon juice.  Mix dry ingredients, stir into apples to coat each slice.  Place apple filling into crust lined 9” pan.  Dot with butter.  Roll out top crust.  With 1” star cookie cutter, remove about  6 stars.  Adjust top crust, seal and flute edge.  Sprinkle generously with cinnamon sugar.  Replace cut-out stars.

Cover loosely with aluminum foil.  Bake 30 minutes @ 425o.  Remove foil, reduce oven to 375o.  Bake 20-30 minutes, until nicely browned, and juices begin to bubble around the stars.  Cool on a rack.  Serve with stars cut from American cheese slices.
